About me

Hi, I’m Deni!


I love cooking with fresh, seasonal ingredients. I taught all three of my children how to cook healthy and nutritious meals - especially my sons. I like experimenting and devising new recipes as well as adapting old ones. I have lived and worked all over the world and this is reflected in my cooking. I believe creating and sharing food is both satisfying and rewarding and look forward to sharing my knowledge and experience.

Veggie Pilaf

Quick and easy dinner.

  • 1 cup of rice of your choice

  • 1 red onion sliced

  • 1 bell pepper, sliced, colour of your choice

  • 1 medium size carrot, finely chopped

  • 1 stick of celery, sliced

  • 1/2 clove of garlic, finely chopped

  • Any other veg of your choice, i.e. sweet corn, mushrooms, broccoli, peas etc

  • 1 stock cube, veggie or chicken

  • Dried herbs 'de Provence

  • Salt 'n pepper

Mexican Lasagne

Tasty mexican ingredients layered upon soft tortillas.

  • Flour tortillas, how many depends on the size of the dish

  • 500g minced beef

  • 1 largish red onion

  • 1 red bell pepper

  • 300g tin of kidney beans

  • 2 cloves of garlic

  • 1 fresh green chilli

  • Chilli flakes

  • Tablespoon of tomato purée

  • 2 chunks of dark chocolate (optional)

  • Sour cream or creme fraiche to serve
